MICHAEL BRIGHT is a musician and sometime trekker from Melbourne who has at one time or another eaten everything on the UTSE menu and who once washed down 19 Momos along with his main meal with a couple of bottles of Nepalese Beer. He is essentially a glutton, who loves the UTSE hotel. Here are plenty of simple, concise but delicious recipes that can be easily made at home. Michael believes the UTSE Momos are the Best in the World. They can be made with either meat or veggie filling and all the recipes are simple with no expensive ingredients. There is also a section on breakfast and hot beverages. DECHEN DOLKAR, daughter of the UTSE's owners, is manager of the UTSE, a graduate of the Swiss hotel management school and an entrepreneur who learnt the basics of cooking from her mother and grandmother. With this background, and having grown up in the UTSE environment. She has a great understanding of Tibetan cooking and is an accomplished traditional Tibetan cook. She also spends quite a lot of time coordinating and assisting the wonderful kitchen staff. Dechen and Michael have tried to use the most popular and requested meals from the retaurant menu.
